Bean Soup

Hearty and health Bean soup is perfect for autumn and winter. This recipe uses green or yellow beans.


  • 1-2 tbsp. olive oil or pork lard
  • 2 garlic cloves, finely diced or smashed
  • 2 medium sized potatoes, diced into small pieces
  • 1 medium chopped carrot
  • 1 large can diced tomatoes
  • 3 cups green or yellow beans
  • 5 cups broth (chicken or beef)
  • Black pepper, salt, dried basil (to taste, start with ½ teaspoon and add ½ tsp at a time until you like it) and parsley (fresh or dried) as a garnish


  • Sauté the onion and carrots together until soft, 3-5 minutes
  • Add stock, tomatoes, potatoes, garlic, pepper, basil,
  • Cook for about 15 minutes
  • Add the green or yellow beans
  • Add salt, a bit at a time, until you like it, and garnish with parsley
