Culinaria

What is “Culinaria”?

Think of “culinary school”, that is where chefs are trained.  The root word is “culinary” which means “of or for cooking.” At Seasons Pharmacy and Culinaria, we are serious about the importance of all things related to cooking well.  We work with local producers and artisans to curate the best possible quality ingredients and value–added products to inspire from-scratch home cooking. We celebrate cultural food traditions and offer skill building in the kitchen through live and online workshops. Kitchen tools and gadgets are available for sale to make the conversion of ingredients into delicious and nutritious meals as simple and fun as possible.

The Connection between
food & pharmacy

We believe that you are what you eat. Furthermore, we also believe that you are what you eat eats. We carefully consider the products we choose to promote. Our priority is local and in-season items. We strive to minimize exposure to chemicals used in the growing and production of plants and animals, and in the industrial processing and packaging of foods – foods that are designed to have a long shelf-life, and not necessarily for vitality and supporting good health. Such chemicals include synthetic pesticides, herbicides, and fungicides, antibiotics, preservatives, dyes, irradiation, and sugar (in all 56 different chemical forms that it can take in highly processed industrial food).

There is some foundation to the belief that food is medicine. Human physiology is based on continuous biochemical reactions that occur in the body. The building blocks for these reactions come from what we eat, or what we take as medicine. The roots of pharmacy are unquestionably found in the plants and animals to treat illness and support health, used by traditional healers of the past and present.

we focus on healthy food, teaching & Inspiring

We cook in our commercial kitchen, Culinaria, every day. We demonstrate simple techniques for meal preparation, offer samples and serve a simple lunch to our staff and customers every day. We support community initiatives in the domain of food literacy and access. We collaborate with chefs and cooks to share recipes in online and in-person classes.

How our food is raised makes a difference

We believe animals should be raised in natural conditions, which includes being outside. We have an integrity agreement with farmers, in order to understand their philosophies and growing practices. We curate animal products that have only had antibiotics if there was a need, that have had access to outside and to have had a good life, with a loving farmer that allows them to express their natural instincts.

We purchase the entire animal. The meat is frozen in brown butcher paper, when possible, to minimize the amount of plastic generated by our consumer habits. We use the bones for broth, and the fats for cooking, making soap or in medicinal salves. We respect the animal by wasting nothing. We promote the consumption of organ meats as means of acquiring bioavailable nutrients that are not commonly found in lean muscle tissue.

Food as a cultural
guide for health

Food is more than simply fuel for the human machine.  Growing, harvesting, eating and sharing food is arguably the reason for civilization, and defines every culture in the world. There are so many wonderful approaches to culinary delight! In the last 100 years, the industrial kitchen replaced grandmother’s cooking and we now find ourselves in a global metabolic health crisis, manifesting as obesity, diabetes, depression, addiction and many other chronic illnesses which afflict younger and younger persons. We reclaim the home kitchen, in the quest for health.
